Our einkorn starter really is something special. It’s creamy, with soft vanilla notes and a milk sourness. It’s also super, super excited to rise loaves for you! Of all the ancient grains, it’s einkorn that comes the closest to behaving like common wheat. It also looks closest to it because the flour has such a light color!

Piimä, a Scandinavian variety, is very thin yet creamy, and drinkable, with a mild, sweet flavor. Culture it with cream instead of milk to make a tasty sour cream-like topping.

Our Authentic Greek yogurt is delicious, rich, creamy, and tart! It’s everything you expect to get at the store, minus the added sugar and stabilizers. Greek style yogurts are strained to remove most of the whey, resulting in a thicker consistency and higher protein content than unstrained yogurt.

Skyr is an Icelandic cultured dairy product. It has the consistency of strained yogurt, but a milder flavor. Skyr is technically classified as cheese, although widely regarded as yogurt. To be classified as a soft cheese you can add optional rennet. This Skyr does NOT have a ropey texture. It’s thick and creamy. This culture is exactly the same as the mesophilic version. It’s the bacteria here that allow for higher temperature fermentation, whereas the yeast are in charge in the mesophilic.

Short Viili is very mild and creamy, with a fairly smooth consistency and a faint sweetness. This culture is not the famed ropey/stringy/slimy variation of viili. We think of it as the less playful and more serious version of this delicious culture rather than the “toy yogurt” our kids love to eat and play with.

Khorasan wheat may be better known to you by its trademarked name, Kamut. This is an absolutely lovely starter, producing sweet, nutty, chewy breads that need astonishingly little kneading. We just don’t have much to say about it other than to get some, because your mouth will explain why it’s so hard to explain this treasure for us!

KID APPROVED!! Our child taster was so delighted by this starter’s bread that she asked to have some (crusts cut off, please) in her lunch at school the next day. Y’all know homemade bread in the school lunch-room is serious business! Our crusts were to crispy for a child who’s losing baby teeth, but she was more than content to nom out on the crumb. This starter is well loved enough that we had to agree not to rotate it out in favor of others.
